I prepared with sweet potato fries, guacamole and a glass of natty red wine! But a great addition to a poached egg and sautéed kale for breakfast or an on the run snack.
Ingredients:
- 4 x zucchinis (grated)
- 1 can of corn
- chopped green onion
- 3 x cloves of garlic (finely chopped)
- 1 1/4 cup of chickpea flour
spice/flavour: cumin, turmeric, black pepper, chilli and oregano.
Instructions:
Combine all the ingredients and let sit for 5 minutes. Then roll into palm size patties... and fry em up!
